My little girl has become a little fussy at meal times, sometimes eating what we give her and other times not so we’ve decided to try a few new recipes to try to entice her.
This week we tried Pork and Pineapple Satay Kebabs taken from our Instant Cooking recipe book. We thought she’d like the kebab style and it might encourage her with it being something different…
We replaced the pork with chicken but the basic premise of the recipe is simple to follow all you need is:
- 3/ 4 chicken breasts
- 1 small onion (chopped)
- 1 garlic clove (chopped)
- 4 tbsp soy sauce
- finely grated lemon or lime zest
- 1tsp ground cumin
- 1tsp ground coriander
- 1tsp ground turmeric
- 1tsp dark raw sugar
- Can pineapple chunks
- salt and pepper
Step 1: Cut the chicken into cubes and add to a large bowl
Step 2: Blend the onion, garlic, soy sauce, spices, lemon / lime zest, sugar and two pineapple chunks until smooth
Step 3: Add the paste to the chicken in the bowl
Step 4: Thread the chicken and pineapple onto skewers
Step 5: Cook under the grill for 10 / 15 mins turning occasionally until golden brown.
We served this with boiled rice. You can also make a satay sauce to serve it with but we kept it simple this time round.
I have to say, even though my fussy little girl STILL didn’t eat it the first time, she now loves it. It’s simple and quick to make and the flavours are fantastic yet not too intense.
